Coconut, garlic and a touch of cayenne liven things up and make this chicken oven-fried in butter a true delight.
Wash and dry chicken pieces.
Mix dry ingredients (except coconut) together.
Dip chicken pieces in the egg then roll in the coconut, then in the seasoned flour.
Melt butter in a baking dish large enough to hold the chicken pieces in one layer. Arrange chicken in dish and bake at 375F for 40 -45 minutes until chicken is browned, tender and juices run clear.
