I am not sure why my family calls this southwest chicken – the main ingredient is teriyaki! Nonetheless, my Mom has been making this one for years. It is a simple meal that impresses guests. The tomato and green onion lend great eye appeal and the flavor can’t be beat!
Place chicken breasts in a Ziploc bag and add teriyaki marinade. I like to marinate these at least 8 hours or overnight for best flavor. Occasionally flip bag for best results.
Heat traditional grill or George Foreman indoor grilling machine. When heated, grill chicken until done.
While chicken is grilling, dice tomatoes and slice green onions, tops included. Turn on oven broiler.
When breasts are done grilling, place them on a cookie sheet and top each one with a slice of provolone cheese. Place under broiler for about 2-3 minutes. Remove and place on plates and garnish with diced tomato and sliced green onions.
Serve and delight your tastebuds!

This recipe is delicious! I made it 3x’s already and everyone loves it. It is simple, easy, and delicious. I ran out of the terriyaki marinade(from making it so many times so I tried Lawry’s Asian Marinade, this is delicious also and Lawry’s only takes 30 minutes to marinade. Yum! Make this one you will love it. Thanks for the recipe.

I made this recipe last night. My family enjoyed it & I would make it again. The only thing I would add is some
thickened teriyaki sauce drizzzled on the top before serving. I served it Rice. Overall it was Yummy!
