Enjoy this classic without the dairy. You won’t miss it!
Set a large skillet on medium heat. Add garlic and onion with the olive oil. Keep an eye on the skillet to make sure the garlic and onion don’t burn. Once they start getting fragrant, add tapioca flour and coconut milk.
Start adding spinach in bunches by the handful. Continue tossing the spinach as you go so it cooks evenly. Add sea salt.
Once spinach is evenly cooked, it is ready to serve.
