Cabbage roasted to perfection and drizzled with a slightly sweet apple and walnut dressing.
Preheat oven to 400ºF.
Place the cabbage with the root on the cutting board and slice into 5 “steaks” about ¾ inch thick. Place steaks on a baking sheet, drizzle with a few tablespoons of melted coconut oil (I melt mine in a small oven-safe container while the oven is preheating) and sprinkle with a pinch or two of salt. Roast for 17 minutes, flip over, and roast for 17 minutes more.
While cabbage is roasting, prepare the sauce. Reserve half of the apples for garnish, then place all remaining ingredients in a high-speed blender and blend until smooth.
When the cabbage is finished, plate, drizzle with a generous amount of dressing and top with reserved finely diced apples and walnuts, if desired.
