A deliciously simple chicken meal that packs a lot of flavor.
Rub chicken with one of the packets of fajita seasoning and let sit for an hour or two.
Preheat oven to 355ºF.
In a shallow dish, mix remaining fajita seasoning with breadcrumbs. In a separate dish, beat eggs. Coat the chicken in egg and then in the breadcrumb mix. Place coated chicken pieces in a pan. Add a little oil and cover with foil.
Bake 2 hours. Once done, set oven to broil (low) and put chicken under the broiler for about 3–5 minutes.
Stir-fry onion and peppers in hot oil. Top chicken with stir-fried onions and peppers.
