This is my go-to summer pasta dish–fresh, happy, and done in a flash. The ingredients are just loose guidelines, but fresh mozzarella is a must!
Start a pot of water boiling for the pasta. In a large bowl, combine the tomatoes (and their juice), green onions, yellow pepper, salt and pepper to taste, and olive oil. (If you have time, you can marinate this mixture at room temperature for 30 minutes.)
Cook the pasta al dente, drain it, and return it to the pan. Stir in the tomato mixture and adjust the seasonings, adding more olive oil, too, if you like.
Pour the pasta into serving bowls while still warm and top with the fresh mozzarella. Let the cheese settle in and melt a bit, top each serving with a little basil, and serve.
