Easiest pulled pork I’ve ever cooked.
Trim most of the excess fat off the roast. Place the roast in a crock pot and cover with the salsa. Cook all day (8-10 hours) on low, or you can cook it all night on low.
In the morning or after it has cooked all day, remove the roast from the crock pot, trim the remaining fat, and begin shredding the meat. Save the salsa sauce for drizzling over the meat.
Great served as pork fajitas, pork enchiladas, shredded pork sandwiches (really good on onion rolls) or even over mashed potatoes.
