Transform oats into a delicious savory dinner!

In a heavy pan or skillet over medium heat, add olive oil, onions and mushrooms. Saute for 5–7 minutes until onions and mushrooms are golden and tender.
Add oats and stir them in. Add chicken broth and stir oatmeal often while it cooks, until soft and creamy and broth has cooked down, about 10–12 minutes.
Season to taste with kosher salt and then stir in the parsley and serve hot. If desired, you can also stir in chopped asparagus, fresh peas and green onions during the last few minutes of cooking.
