This recipe has been in our family for years, traditionally made at Thanksgiving and Christmas. It makes a pretty dish in a trifle bowl. Some of us have been known to substitute cranberries for the mixed berry blend. Almost like a dessert in itself, everyone loves it and can’t stop eating it. Makes for a great potluck dish, too. Enjoy!
Combine all packages of gelatin in a large bowl and dissolve in boiling water. Add berries and pineapple with juice, stir until well-mixed.
Pour half of the mixture into a large glass bowl (casserole, trifle or sprayed mold). Refrigerate until firm, about 1–2 hours. Cover remaining gelatin mixture and let stand on counter at room temperature so it doesn’t firm up.
Remove set gelatin from fridge and gently spread sour cream over. Spoon remaining gelatin mixture over sour cream layer. Return to fridge and chill until firm, another 1–2 hours.
Note: You can substitute canned whole cranberries for the frozen berries at Christmas.
