Yellow lentils spiced with Indian flavors.
In a pot of boiling water, add lentils and cook until soft, about 15 minutes. Drain and set aside.
In a skillet on medium high heat, add oil and heat until warm. Add onions, salt, pepper and garam masala. Cook until softened, 3–4 minutes. Add stir-in-pastes and cook 1–2 minutes.
Add tomatoes and cook for 1 minute. Add diced potatoes, cover pan and cook for 10 minutes. Add coconut milk, stir well and cook for 1 minute.
Add spinach and cook until wilted, about 3 minutes. Finish by adding lentils. Mix well and cook for 2–3 more minutes.
