Description

Great light supper or lunch option.

Ingredients

  • 5 ounces, weight Albacore Tuna In Water, Drained
  • 1 cup Sour Cream
  • 1 stalk Scallion, Sliced Into Small Pieces
  • ¼ teaspoons Black Pepper
  • ½ cups Grated Pepper Jack Cheese
  • ¼ cups Panko Or Seasoned Bread Crumbs

Preparation

Preheat oven to 375ºF. Spray an oval or square baking dish and set aside.

In a mixing bowl, add tuna and break it apart with two forks. Add sour cream, scallions, black pepper, grated pepper Jack cheese, and mix well to combine. Transfer ingredients into the baking dish, smooth out with an offset spatula. Add Panko or seasoned bread crumbs across the top. Cover dish with aluminum foil and bake 15 minutes covered. Remove foil and bake an additional 5 minutes.

Serve with a mixed green salad or vegetable side dish. It’s a favorite!
