A delight made with fresh, velvety mozzarella, juicy, tart and sweet heirloom tomatoes, garlicky pesto, a creamy, tangy balsamic aioli, and a rustic loaf of ciabatta.
To make the aioli, mix the mayonnaise, balsamic vinegar, salt and pepper in a bowl.
To assemble sandwich, spread pesto on one half of the roll. Top with fresh mozzarella log slices. Top with tomato slices. Spread balsamic aioli on the other half of the roll, and top your sandwich.
If desired, use a panini press or grill to grill the sandwich.
