This is a family recipe that my boyfriend shared with me when we had just begun dating. Being half-Italian, he appreciates good food and knows how to cook well. I fell in love with this recipe; it is quite easy to make it, so delicious, and has so much flavor. Also, it is great comfort food for long winter evenings. The main key to make it tasty is to fully reduce the sauce.
Preheat pan over medium heat. Add ground beef and fry for about 5 minutes. Lower heat and make sure the meat doesn’t burn but cooks through, with no red or pink color inside. When the meat renders its fat, scoop out the fat. Continue frying for 1 more minute.
Add diced tomatoes and tomato sauce; stir well. Add tomato past and stir again. When the sauce begins to boil, reduce heat to low and continue to stir occasionally, not letting it burn. Cook the sauce for 30 minutes to reduce it.
Add minced garlic, diced onion and basil to the sauce and continue to cook over low heat. Season with salt, pepper and sugar.
Meanwhile, cook the pasta of your choice. I love to use bow tie pasta or fettuccine.
The sauce should reduce after 30 minutes of cooking. If it is still too soupy, you can cook for 5–7 more minutes. But do not forget to stir.
Add pasta to the sauce and cook for 5 more minutes, so pasta will absorb all the flavor. Serve sprinkled with Parmesan cheese for more flavor. Enjoy!
