This grilled trout dinner may be simple and quick to pull together, but don’t be fooled by its simple nature. The flavors of orange, tarragon, dill, and parsley mix together for a rich and complex tasting fish dinner.
Make sure fillets have been cleaned, de-boned and rinsed. Leave the skin on the fillets.
Preheat grill to medium high and rub with vegetable oil to help prevent sticking.
Salt and pepper each fillet of fish. Place a single layer of orange slices along one of the fish fillets. Layer dill, tarragon, and parsley on top of orange slices. Place the second fish fillet on top and bundle the entire thing together with kitchen twine.
Place fish fillet sandwiches in a grill basket and place directly on heat of grill. Cook for 7 minutes, flip, and cook an additional 7 minutes.
