Description

With the same texture as fried fish, these fish bites are baked not fried, and take you straight back to a childhood favorite!

Ingredients

  • FOR THE TARTAR SAUCE:
  • ½ cups Mayonnaise
  • 2 Tablespoons Sour Cream
  • 2 Tablespoons Sweet Relish
  • 2 Tablespoons Dill Pickle Relish
  • ½ teaspoons Creole Seasoning
  • Salt And Black Pepper To Taste
  • FOR THE FISH BITES:
  • 2 Tablespoons Canola Oil
  • 1 cup All-purpose Flour
  • 1 teaspoon Creole Seasoning
  • ½ teaspoons Garlic Powder
  • Salt And Black Pepper
  • ½ cups Milk
  • 1  Egg
  • 1 cup Panko Bread Crumbs
  • 1 pound Cod Or Halibut Fillets, Cut Into Bite-sized Pieces
  • Lemon Wedges, To Serve

Preparation

For the tartar sauce:
Combine all ingredients for tartar sauce in a small bowl. Whisk until smooth. Adjust seasoning to taste. Cover and refrigerate until ready to use.

For the fish bites:
Preheat oven to 450ºF. Pour oil into baking sheet and tilt to spread evenly. Place baking sheet in oven as it preheats.

Take 3 separate shallow bowls. In one bowl, add flour, creole seasoning, garlic powder and a dash of salt and black pepper. Whisk together. In the second bowl, whisk together milk and egg. In the third bowl, add panko bread crumbs. Dredge each piece of fish in flour, then egg mixture, and finally into bread crumbs. Place dredged fish on preheated baking sheet. Spray fish generously with nonstick canola oil spray.

Bake fish for 15–20 minutes, flipping once midway through, or until brown and crispy on both sides. Remove from heat and serve immediately with homemade tartar sauce and lemon wedges.
