My mother-in-law’s version of the famous casserole. A staple in our family!
Preheat the oven to 325 degrees.
Soften the bell pepper and onion in butter. Add soups, chicken, and Rotel and heat through.
Spray a 13×9 baking dish with cooking spray. Layer tortilla chips, soup mixture, and cheese. Repeat 2 more times to make a total of 3 layers.
Bake for 40 minutes until warm and bubbly.

Notes:
Tortillas can be substituted for chips. If using chips, do not use thin chips as they tend to get soggy while baking.
Different “cream of” soups can be substituted. I have used cream of celery and cream of potato, and it was still good!
If you like things spicy, use 2 cans of Rotel, or use the hot variety. I use mild because my kids are not fans of spicy food.
