Love them or hate them, beets and Brussels sprouts taste amazing together in this simple skillet, topped with blue cheese and pecans!
Clean and half your Brussels sprouts. Heat oil and garlic in a large skillet over medium heat. Add Brussels sprouts with their cut sides down. Allow the bottom side to brown before adding the water, then cover skillet. Cook to desired doneness, about 10 minutes.
Check your Brussels sprouts and if they are nearly done to your liking, add the sliced beets to the top of the skillet. Season with salt and pepper, then drizzle the honey over everything. Mix well until the beets are hot and the skillet is well combined.
Remove from heat. Garnish with blue cheese and pecans. Enjoy!
