Tender pork chops covered with a brown sugar glaze and topped with tart Granny Smith apples.
Note that the recipe requires at least 1 hour of marinating so plan ahead.
1. In a large bowl, combine apple juice and soy sauce. Add the pork chops and flip to coat them. Brine them in the refrigerator overnight or for at least 1 hour.
2. Preheat oven to 350 F.
3. Melt butter in a medium size skillet over medium heat. Add sugar, salt, black pepper, cinnamon, and nutmeg. Add apples, cover and cook until the apples are just tender (mine only took a minute or two).
4. Remove the cover. Cook the sauce until slightly thickened. Place the pork chops into a casserole dish in a single layer. Pour the sauce over the pork chops. Bake for 20 minutes, or until the pork chops are cooked through.
Enjoy! This meal is great with a nice vegetable like green beans and some fresh bread.
Notes:
1. I brine my pork chops in the apple juice and soy sauce to help make them extra juicy. This step is optional, but I feel it makes the pork chops extra tender.
2. I used 1/2-inch thick pork chops because this is what they had at the store. These are thin and cook fast, therefore they only needed 20 minutes of cook time. Feel free to use 3/4-inch to 1-inch thick pork chops and adjust the cooking time to 40-45 minutes.
3. I cut the apple into cubes, but feel free to thinly slice instead.
