I don’t care what kind of gourmet chef you fancy yourself as—sometimes you just want to enjoy some all American comfort food. This is one of my family’s favorite recipes and an all-time classic if you ask me. Not only is it kid-friendly, it won’t break the calorie bank with less than 300 calories per slice.
Cook bacon until slightly crisp using whatever method you prefer then drain it and chop it very finely. I like to bake mine at 375 F for 15 minutes. It should be slightly crispy.
Preheat oven to 350 F.
In a medium bowl combine bacon, ground beef, cheddar cheese, egg, breadcrumbs, onion, mayonnaise, milk, Worcestershire sauce and half of the dill pickle. Press the meat mixture into a standard size loaf pan that you’ve sprayed with cooking spray.
In a small bowl, combine the ketchup and mustard. Spread this over the top of the meatloaf. Sprinkle the rest of the dill pickle on top.
Bake for 50 minutes, or until meatloaf is cooked through. Drain grease before serving if desired (be careful to not let toppings slide off).
