This one pot meal is quick, easy and versatile. If you’ve got some meat lovers over for dinner, then go ahead and throw in some extra chicken. Otherwise, try it sans chicken for a meatless meal that’s filled with hearty beans and veg and won’t make you sorry you left out a little poultry. The flavors are Texas-sized, and the fixin’s add just the right complements to the filling soup.
Place all ingredients in a large slow cooker. If needed, add the water to cover the ingredients. Cover and cook on low setting for 6-8 hours or on high setting for 3-4 hours. If using frozen chicken, once the chicken is cooked through (usually with about 1-2 hours left on high), take it out of the slow cooker and shred with a fork. Place shredded chicken back in the slow cooker for the remainder of the cooking time.
Remove the bay leaf and serve with rice, shredded cheese, sour cream, and broken tortilla chips.
