My favorite glorified grilled cheese—when I close my eyes and eat this sandwich I can picture myself in Paris.
For each individual sandwich, brush one side of one slice of bread with the clarified butter, cover with a handful of shredded Gruyere cheese. Take a second slice of bread and brush one side with the clarified butter. Lay the second piece, buttered facing out, on top of the cheese. Repeat with the remaining ingredients. You’ll need the rest of the Gruyere in a bit so set that aside.
Heat a frying pan with the remaining clarified butter and brown the sandwiches slowly on each side until nice and golden. Remove the sandwiches and place on a baking sheet. Continue cooking the rest of the sandwiches. Add butter as needed.
Heat the broiler in your oven.
Top each sandwich with 2-3 thin slices of Saint Maure goat cheese and another handful of the Gruyere cheese. Broil in the oven for approximately 5 minutes (keep a close eye on the sandwiches as they have a tendency to burn quickly).
