Easy recipe for a light fish supper, crispy and flaky without the oil!
Preheat oven to 400ºF. Zest the lemon then cut lemon into wedges. Set aside.
Onto a plate, add seasoned Italian breadcrumbs. Add each piece of frozen tilapia into the seasoned breadcrumbs and coat both sides. (No need to egg wash first—breadcrumbs should adhere to frozen tilapia.)
Melt butter for 30 seconds in the microwave then add olive oil and stir together.
In a 9 x 12 baking dish, add breaded coated tilapia in a single layer. Combine lemon zest, salt, black pepper, paprika and parsley in a small bowl then sprinkle it over the breaded tilapia. Add melted butter and olive oil over the fish.
Bake at 400ºF for 12 minutes. The tilapia browns up nicely. It is light, flavorful and crispy. Squeeze lemon wedges over baked tilapia and enjoy!
