Egg Salad BLT

Description
Looking for a way to use up all those eggs you dyed for Easter? This is the perfect recipe, made using two family favorite sandwiches … egg salad and BLT.
Ingredients
- 4 whole Hard-boiled Eggs, Peeled And Chopped
- 4 Tablespoons Mayonnaise
- 1 Tablespoon Yellow Mustard
- ¼ teaspoons Black Pepper
- ¼ teaspoons Salt
- 1 whole Dill Pickle, Chopped (1 Should Yield 2 Tablespoons)
- 4 slices Bread, Toasted
- 4 slices Bacon, Cooked Crisp
- 4 whole Lettuce Leaves
- 1 whole Tomato, Sliced
Preparation
Combine the first 6 ingredients in a bowl. Mix well. Spread the egg salad evenly on two pieces of the bread, top with bacon, tomato and lettuce. Add a piece of bread to the top of each sandwich. Makes 2 sandwiches.
