I rarely calorie splurge on croissants but I do so love them. This creamy, salad version of a BLT includes shrimp and is served in a croissant. It is a favorite, occasional indulgence!
Chop the shrimp coarsely. In a medium size bowl mix the shrimp, tomatoes, bacon and mayonnaise.
Slice each croissant in half horizontally. Cover the bottom half of each croissant with a lettuce leaf. Divide the shrimp mixture between the four croissants and cover with the top.
