A grilled cheese sandwich made with fresh berries that is topped with sweet chocolate, slightly salty brie cheese and drizzled with homemade wine reduction sauce with hints of berries and vanilla.
In a small saucepan add the wine, sugar and vanilla extract and bring to boil. Reduce heat to a simmer and reduce mixture until about half of it remains. This should take about 25 to 30 minutes. Remove from heat.
To make the sandwich: In a bowl add berries and slightly smash them with a fork. Add the berry mixture onto one slice of bread and drizzle with about 2 tablespoons of wine reduction. Top with chocolate, then add the brie cheese. Top with the other slice of bread. Place onto a panini maker and cook according to manufacturer’s instructions until cheese and chocolate is melted.
Note: You will have wine reduction sauce left. Save it to add on top of more sandwiches, yogurt, ice cream or even a salad.
