Super cheesy, super easy. A win-win!
Boil a pot of water on medium-high and cook your pasta according to the package instructions.
While pasta is cooking, whisk together your eggs, milk, Parmesan cheese, Pecorino cheese and black pepper in a medium-sized bowl. Set aside.
Heat your oil in a skillet on medium, then add the bacon and cook until fully cooked and crisp. Remove it from the skillet and set aside on a paper towel lined plate. Add your onion into the same skillet and cook in bacon grease until translucent, about 5-6 minutes.
When pasta has reached al dente, drain it and then immediately return it to the hot pot. Quickly add in your egg mixture while continuously tossing pasta to coat it. The heat of the pasta will cook the egg in your sauce.
When pasta is coated, add in your onion and bacon and mix it in. Then serve it and top with additional cheese if preferred.
