Description

One of the best chicken dishes I’ve ever had. This chicken is spiced with cinnamon, cardamom, turmeric and paprika to create a fragrant chicken and it’s topped with a honey citrus sauce.

Ingredients

  • 4 whole Bone-in, Skin-on Chicken Drumsticks
  • 4 whole Bone-In, Skin-On Chicken Thighs
  • 1 whole Small Yellow Onion, Roughly Chopped
  • ½ teaspoons Ground Cinnamon
  • ½ teaspoons Ground Cardamom
  • ½ teaspoons Turmeric
  • ½ teaspoons Paprika
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper
  • 1 cup Chicken Stock
  • 1 Tablespoon Honey
  • 2 whole Oranges, Just Rind And Juice
  • 1 whole Lemon, Just Rind And Juice

Preparation

1. Preheat your oven to 350 F (180 C). Wash, trim, and dry all the chicken. Set aside in a large bowl.
2. In a food processor, blend the onion, cinnamon, cardamom, turmeric, paprika, and olive oil until relatively smooth. Toss the onion spice mixture with the chicken and rub it under the skin of the chicken.
3. Arrange the chicken on a roasting pan and season with salt and pepper. Roast in preheated oven for 45 minutes.
4. While the chicken is roasting, bring the chicken stock and honey to a simmer in a medium-sized saucepan. Add the fruit rinds and let the mixture simmer for ten minutes or until the rinds are soft. Remove from heat and add the citrus juices. When the chicken has roasted for 45 minutes, remove from oven and pour citrus sauce over the chicken. Return to the oven for an additional 10-15 minutes, or until the chicken is golden brown.
5. Remove from oven and baste with the sauce and juices at the bottom of the roasting pan. Serve with rice and roasted veggies.
