An old-fashioned recipe for a classic favorite. My husband thinks these are the closest thing to the kind his grandmother made.
In a large bowl, cream together the butter, shortening, and sugars. Mix in peanut butter, eggs, and vanilla.
In a separate bowl, stir together the dry ingredients. Mix the dry ingredients gradually into the butter mixture and mix until thoroughly combined. Chill the dough at least an hour or two to make it easier to handle.
Preheat oven to 350ºF. Form the dough into balls using a 1 1/2-tablespoon cookie scoop. Roll the balls in sugar and place on parchment-lined baking sheets. Flatten with a fork
Bake in preheated oven for about 10 minutes. Allow to cool on baking sheet for 2 minutes and then remove to cooling racks.
Makes about 5 dozen cookies.
