Description

Flavorful, quick, filling, and (best of all) healthy, these Orange Teriyaki Salmon Rice Bowls are sure to be a hit!

Ingredients

  • FOR THE ORANGE TERIYAKI SAUCE:
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 clove Garlic, Minced
  • 1 cup Fresh Squeezed Orange Juice
  • ⅓ cups Teriyaki Sauce
  • 1 teaspoon Worcestershire Sauce
  • 1 Tablespoon Brown Sugar
  • 1 pinch Salt And Pepper, to taste
  • FOR THE RICE BOWLS:
  • 2 cups Uncooked Brown Rice
  • 4 whole (6 Oz. Size) Salmon Portions
  • 3 cups Broccoli Crowns

Preparation

For the orange teriyaki sauce:
1. In a small saucepan, heat olive oil over medium heat.
2. Add garlic to oil and sauté until fragrant, about 1 minute.
3. Whisk in remaining sauce ingredients and bring sauce to a simmer.

For the salmon rice bowls:
1. Cook rice according to package directions.
2. Brush a few teaspoons of the teriyaki sauce over the salmon. Bake at 350F for 12-15 minutes until cooked through.
3. Steam or sauté broccoli until cooked through.
4. To assemble, scoop rice and broccoli into bowls and top with a piece of salmon. Pour a ladleful of the orange teriyaki sauce over the top and serve immediately.

This recipe was flavorful enough for me, but mild enough for my picky family. It was so easy, fast, and healthy that it has made the list of busy weeknight dinners at our house.

I made this last night. It was very easy to throw together and made for a great meal. I added cornstarch to my teriyaki sauce mixture since it was a little thin, but that fixed it. Thanks for the easy meal! It was on the table in less than 30 min! winner!
