Chicken Cordon Bleu doesn’t have to be as fancy as it sounds. In fact, making it can be dead simple and done in about 10 minutes. Read on for how to make this easy dinner.
Preheat oven to 400°F. Butterfly and flatten your chicken breasts (I put them between sheets of plastic wrap and pounded them gently with a mallet until they were even thickness). Season both sides of the chicken with your choice of herbs and salt and pepper. Spread Dijon mustard on one side. On the same side add your meat and cheese. Roll up the chicken breasts and stick them with toothpicks to keep them rolled. Put them into a baking dish, seam side down. Bake in the heated oven for 30 minutes or until inside reaches 165°F.
