This is my favorite way to use tomatoes fresh out of the garden bed. I prefer using a long, whole grain pasta but use whichever pasta makes you happiest.
Bring a large pot of salted water to a boil and add pasta. While it is cooking, prep tomatoes, basil, and garlic and mix with oil, vinegar, salt, and pepper. Once pasta is al dente, drain and mix with the sauce. Serve with goat cheese sprinkled on top to your liking.
