This is a very simple grilled salmon. It’s very tasty and quick to make. I serve it with rice and broccoli or angel hair pasta and julienned sweet peppers.
Combine Cajun spice, sugar, and salt in a small bowl. Rub over all surfaces of fillets. Place on grill over medium-hot coals (if using charcoal) for 3 to 5 minutes. Turn fillets and grill an additional 2 to 3 minutes (see note).
Blend marmalade and lime juice in a hot pan, swirling around until melted. Add grilled salmon fillets and carefully turn to glaze on all sides. The salmon is done when it begins to flake when tested with a fork.
Note: Alternatively, sauté fillets in 2 tablespoons vegetable oil in a nonstick skillet over medium-high heat. Continue with blending the marmalade and lime juice in the same pan.
