Quick and simple, this savory meal is great for any time of year. It can be prepared in 40 minutes or less with only 8 ingredients and uses just one pan! Serve with mashed potatoes to soak up those extra juices.
1. In a large pan over medium heat add half of the olive oil. Sprinkle salt and pepper over chicken breasts and place into the pan. Cook chicken until golden brown, approximately 10 minutes per side or until internal temperature reaches 165°F. Remove chicken from pan and set aside on a plate; cover to keep warm.
2. In the same pan add remaining olive oil and onion. Cook over medium heat for 5-7 minutes stirring occasionally until onions start to turn clear.
3. Stir in mushrooms. Cook for 2 minutes.
4. Add Marsala wine and cook for 5 minutes, stirring occasionally.
5. Stir in butter until melted.
6. Serve onions and mushrooms in sauce over chicken breast.
