I am a lover of hummus and my family tells me regularly that I like the strangest combinations. It’s true, I do, and this recipe could likely be described by some to be just that: a strange combination. To me it is a perfect combination.
Preheat oven to 350ºF. Brush the naan on both sides with a little bit of olive oil. Place in a casserole dish, on a pizza pan or a baking stone. Put it in the oven and bake for about 10 minutes. Flip the naan over and bake another 10 minutes.
Remove the naan from the oven and put 1/2 cup of hummus on each naan. Evenly divide the spinach leaves and the goat cheese and place on top of the hummus. Put the naan pizzas back in the oven and bake for 15 minutes or until the crust is crisper and the cheese softens and melts slightly.
