A childhood favorite that makes a quick, easy lunch.
In a skillet over medium heat, brown the ground beef or chicken. Then remove it from the heat, drain off the grease and let it cool. The chopped onion is not cooked with the meat; it is added raw in the next step.
Mix the remaining ingredients into the meat in the skillet then put it into a bowl, cover it and store in the refrigerator until ready to use.
Spread 1/3 cup of the filling on half of an English muffin or hamburger bun and put it on a baking sheet. Make as many as you like.
Bake at 350 F for 5 minutes or until heated through, then place under the broiler until cheese melts a bit. Serve immediately.
Note: These freeze well. Freeze mixture in 1/3 cup portions on a cookie sheet. Then once they are frozen wrap them individually and place in a freezer storage bag. To heat, unwrap and place frozen portions on English muffin halves and bake at 350 F until heated through, then broil as above.
