This is a light version of the rather heavy 1000 Island dressing. I lightened it up with a mix of vegan mayo and Greek non-fat yogurt. I also reduced the sugar and sodium by using my homemade ketchup and less salt. With minced red bell pepper and the cucumber relish, it’s just very fresh! Serve with crisp lettuce (e.g. iceberg), tomatoes, cucumbers and other raw veggies, or with a seafood salad or smoked salmon.
In a small food processor or mixer, blend everything (except the red bell pepper and cucumber relish) until smooth. Add the bell peppers and the relish and mix one more time.
