Creamy Spinach Quesadilla
Ingredients
- 8 ounces, weight Fresh Spinach, Washed And Chopped
- 1 teaspoon Unsalted Butter
- 2 Tablespoons Yellow Onion, Finely Diced
- 1 teaspoon Sour Cream
- ⅛ teaspoons Nutmeg
- 1 whole Flour Tortilla
- ¼ cups Shredded Monterey Jack
Preparation
In a large non-stick skillet, on low heat, saute the spinach in butter. Once the spinach has wilted, add the onion, sour cream, and nutmeg. Put the spinach mixture on one half of the tortilla and spread cheese on top of the mixture. Fold the tortilla in half and cook on a hot cast iron skillet until browned on each side. Cut into wedges and serve immediately.
