A favorite comfort food dish made without any canned soups! I’ve replaced them with a homemade cheese sauce.
Preheat oven to 350 F.
Place diced onion and ground beef into a skillet and cook over medium heat until beef is thoroughly cooked. Drain excess grease from skillet and set aside.
Warm the milk in a saucepan over medium low heat or in the microwave. You don’t want to boil it, just get it hot. Heat in the microwave for 60 seconds then for additional 30 seconds as needed. set aside.
Melt butter in medium saucepan over medium heat.Once the butter is melted, add flour and mix constantly for 2 minutes. Add warm milk into the saucepan. Using a whisk, stir milk and butter/flour mixture together until sauce slightly thickens (3 to 4 minutes). Remove from heat and add grated cheese, salt and pepper. Mix until cheese has melted.
In a large bowl, combine beef and onions, cheese sauce, french fried onions and frozen tater tots.
Lightly spray a 9 x 13 pan with non-stick cooking spray and pour contents of bowl into pan. Bake for 45 minutes to an hour until casserole starts to become bubbly.
