Deliciously simple and comforting. An Italian twist on your everyday breaded chicken..
In a shallow bowl, gently mix the eggs and the milk. Set aside.
In another shallow bowl, combine the breadcrumbs, cheese and all other spices.
Season your chicken on both sides with additional salt and pepper. Melt olive oil and butter in a skillet over medium high heat.
Thoroughly dredge the chicken in the egg, and then the breadcrumb mixture.Evenly coat both sides, shake off excess, then into the hot pan! Do not overcrowd the pan with chicken; I always cook them in batches. Cook about 4-5 minutes on each side, until golden and cooked through. Remove from pan and cover to keep warm until the rest of chicken is finished.
Note: You may need to “clean” the pan halfway through if excess breading has come off of the chicken. Just add another 2 tablespoons each of olive oil and butter and get back in the game!

Italian Americans call these chicken cutlets- and yes, they are delicious!
