Description

Cauliflower and Italian sausage come together with just a few ingredients for a filling and healthy one-pot dinner everyone will love! Suitable for paleo and gluten-free diets as long as the sausage meets those requirements.

Ingredients

  • 1 pound Italian Sausage Links
  • ¼ cups Water
  • 1 head Cauliflower
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 1 cup Prepared Marinara Sauce

Preparation

Preheat oven to 450ºF.

Place the sausage in a large pot and cover with water, about 1 inch. Bring the water and sausages to a boil and let them cook for 10 minutes.

Meanwhile, cut the cauliflower into florets, place in a 9×13 pan, and toss with the olive oil, salt and pepper. Pour the marinara and water over the cauliflower. When the sausage is done boiling, nestle the links into the cauliflower, place the whole dish in the oven and roast for 25 minutes at 450ºF, turning the sausage halfway through. Serve hot!

It was ok, I added more veggies for a more filling dinner which I think made it better. Not sure what it was, but it still felt like something was missing..? I do like the idea of pasta sauce with veggies though.

Really good and very simple. Just seemed like something was missing. Maybe I will add sliced onion next time.
