Super easy semi-homemade lasagna!
Preheat oven to 350 degrees. Spray a 9×13 pan with non-stick cooking spray.
Brown and drain ground beef, if using. Add spaghetti sauce to skillet with ground beef.
In a small bowl, combine sour cream and cottage cheese.
Layer lasagna in prepared pan starting with sauce/meat mixture, then mozzarella cheese, then uncooked lasagna noodles.
Spread sour cream mixture on top of noodles, and repeat until ingredients are used. End with mozzarella cheese on top.
Pour 1/2 cup water around edges of pan once lasagna is assembled. If your pan is really full, use a baking sheet on the lower shelf of your oven to catch drips.
Cover with foil and bake at 350 degrees for 45 minutes, then remove foil and continue baking for an additional 15 minutes or until top is lightly browned.
Serve with Parmesan cheese, if desired.

This recipe is quick and delicious. I added some chopped mushrooms to mine. I’m curious if this can be made ahead of time without freezing and without the noodles getting too soggy.

This was okay, but not great. Just tasted a bit bland. Next time I would add more seasoning…otherwise it was easy.

This turned out good! It was just a little bit watery – but I’d rather have that than uncooked noodles. I did use the 1/2 cup water to ‘rinse’ out my sauce jar to get that last bit of sauce! I also used wheat lasagna noodles to add just a bit of healthy factor in, and added some Tastefully Simple Spinach & Herb seasoning to the cottage cheese/sour cream mixture to add a little extra flavor there too!

This is also super easy to freeze, unbaked, but once it is completely assembled. Just thaw and bake as directed.
This is such a great recipe, with delicious results.
