The title says it all.

Ingredients

  • 1 pound Orecchiette Pasta
  • 1 Tablespoon Butter
  • 3 Tablespoons Olive Oil, Divided
  • 1 Tablespoon Garlic, Minced
  • 1-½ pound Sweet Italian Sausage (casings Removed)
  • 1 cup White Wine
  • 2 cups Arugula

Preparation

Bring a pot of water to a boil and cook pasta according to package instructions for al dente. Drain it in a colander then put it back into the pot, add in the butter, and set aside.

Heat 1 tablespoon of olive oil in a large skillet on medium heat. Add the garlic and saute for 30 seconds. Add the sausage and saute it with the garlic, breaking up the sausage as it cooks. Allow sausage to brown completely, about 6-7 minutes.

Add the white wine and scrape the bottom of the pan to release brown bits. Add the arugula and allow it to wilt for 30 seconds. Top with remaining olive oil and give it all one final toss.

Put pasta onto your plates, top with the sausage and arugula mixture and enjoy!
