You can add all different vegetables—anything you have on hand.
In a saucepan, combine the quinoa and chicken broth. Bring to a boil, reduce to simmer, cover and cook for 20 minutes.
While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 to 6 minutes. Add the peas, and continue cooking for another minute or two. Add the chicken and then the quinoa. Add the spinach and bell pepper, cooking for another minute or two.
Serve immediately.

I made this over the weekend, and added a 1/4 cup or so of raisins at the end, and found it to be a wonderful addition.
