A lighter version of a favorite, and a sneaky way to get more veggies into your family’s diet.
Preheat oven to 450 F. Spray an 8 x 11 baking dish with cooking spray and set aside.
Toss cauliflower with one tablespoon of oil and put it onto a rimmed baking sheet. Roast it in the preheated oven for about 25 minutes or until tender and starting to brown. When done remove it from the oven and set aside.
Cook pasta according to package directions. When done drain and set aside.
Meanwhile, in a large skillet over medium high heat add 1 tablespoon olive oil, onions, and garlic. Let the mixture bloom for 2 minutes. Add in chicken stock and spices. Let it simmer for about 5 more minutes.
Now whisk in flour and milk. Let the mixture thicken and simmer about 5 more minutes. Taste and adjust seasonings.
Now add in cooked pasta, 1/2 cup mozzarella cheese, 1/2 cup Parmesan cheese, and cauliflower. Stir well to combine.
Pour into a 2-quart baking dish and top with remaining cheeses.
Bake 20-25 minutes until cheese is golden brown and bubbly.

1/2 tsp of pepper was plenty!! wonderful!!
