Description

The most time-consuming part of this recipe is cooking the pasta. The result? Simple, creamy, tangy, delicious avocado spinach pasta.

Ingredients

  • 6 ounces, weight Pasta (any Kind)
  • 1 Tablespoon Olive Oil
  • 1 cup Raw Spinach
  • 2 cloves Garlic, Minced
  • 1 whole Small Jalapeño, Seeded And Minced
  • 1 whole Avocado
  • ½ whole Lemon, Juiced
  • Salt And Pepper, to taste
  • Lemon Zest, To Garnish
  • 1 pinch Red Pepper Flakes

Preparation

Cook the pasta according to package directions.

Add the olive oil to a small skillet over medium heat, and cook the spinach, garlic, and jalapeño until the spinach is wilted, about 3 minutes.

In a food processor, combine the spinach mixture with the avocado, lemon juice, salt and pepper, and pulse until smooth. Toss with the cooked pasta, and serve with lemon zest, red pepper flakes, and fresh cracked pepper. Enjoy!

I really loved this creamy dish. Was concerned the jalepenos would overpower, but they were mild and added just a touch of heat. My husband thought it was too tangy, but I thought it was fantastic.
