Veggie burgers made with leftover vegetarian chili. It’s vegan too!
Cook rice according to package directions. When it’s done remove the pan from the heat and put the rice into the bowl of a food processor. Add chili. Pulse together chili and brown rice until combined.
Pour mixture into a large bowl. Stir in panko breadcrumbs until mixture becomes dry and sticky, adding more breadcrumbs if necessary. Divide the mixture into eight equal sections and shape into a patty.
If serving immediately, fry them in a skillet over medium heat with a bit of oil. Cook for about 4-5 minutes on each side. Serve on a bun with your favorite toppings.
If freezing them, first bake at 400 F for 20-25 minutes. Then let them cool. Then place them into individual freezer bags.
