Tender and juicy thin cut pork with a Southwestern-inspired sauce cooks up in a snap. Serve this with white rice or mashed potatoes and some steamed veggies for a healthy dinner that the family will love.
1. Season both sides of the pork with salt and pepper.
2. Put the flour in a shallow bowl. Dredge the pork in the flour, shaking off any excess flour. Set the dredged pork on a plate.
3. Heat the oil a large skillet over medium high.
4. When oil is hot add the pork to the hot skillet and brown the pork on both sides.
5. Then add the chicken stock and tomatillo salsa to the skillet with the browned pork. Bring the liquid up to a simmer and then cover the skillet. Turn the heat down to medium low. Allow to simmer for 15 minutes.
6. Remove the pork to a serving platter, cover and keep warm.
7. Turn the heat back up to medium high. Add the heavy cream to the sauce that is still in the pan and simmer until the sauce is thickened to the consistency that you like.
Serve chops with rice or mashed potatoes, topped with sauce.
