Have you ever roasted grapes? You should. They are wonderfully sweet and go well with all kinds of sausage.
Preheat oven to 350 F.
In a large oven-safe skillet add the olive oil and sausage. Cook over medium heat. Brown the sausage on all sides, which will take about 10-15 minutes. Then add the grapes and toss to coat them in the oil. Then add the wine and allow it to reduce for 1-2 minutes. Add the vinegar and stir to combine.
Then put the skillet in the oven and roast them, turning the sausages once and continuing until the grapes are soft and the sausage done. This will take about 20-30 minutes.
Combine grits, water and salt in a medium saucepan. Bring to a boil. Reduce heat and allow to simmer for about 5 minutes. Then add milk and butter. Cook another 1-2 minutes or until thick
To serve line the bottom of your serving bowls with grits and spoon the grapes and reduction over the top. Serve topped with sausage.
