Grown up version of the childhood favorite. Made with spicy pepper jack cheese and crumbled bacon.
1. Cook pasta according to package directions. In the last 5 minutes, add in the peas.
2. Bake bacon in a 400F oven for 12 to 15 minutes on a baking rack (say “bake bacon baking rack” three times fast).
3. Melt butter over medium-high heat.
4. Whisk in flour, cook for 1 minute.
5. Stir in warmed milk, continue stirring, and bring to a boil. Reduce heat. Cook, stirring frequently, for about 10 minutes. Sauce will thicken.
6. Combine pasta/peas, white sauce and 2 cups of cheese in a greased casserole dish.
7. Top with remaining 1/2 cup of cheese, bake in the oven for 10 minutes or until the cheese on top is melted.
8. Top with crumbled bacon and serve.

This was really good, sadly (or happily) I’m the only one in my family who really loves pepper jack, so I had to eat most of it (although my 10yo decided he liked it after he finally gave it a try). Yeah, I’m not complaining. Just make sure you get a pepper jack that has a good kick to it, otherwise it ends up a little bland, better for the kiddos, but I prefer the spice:)
Oh, and I doubled the bacon, because, really, who’s gonna complain about more bacon?
