Tasty meatballs with water chestnuts and lime.
1. Preheat oven to 375°F. Line a baking sheet with parchment paper. Add the cilantro and water chestnuts to the bowl of a food processor, and pulse for a few seconds, until finely ground but not liquid.
2. Add all the other ingredients except for the meat, and process in pulses until well incorporated.
3. Add the ground meat and pulse 1 or 2 seconds, until combined. Don’t over process or the meatballs won’t hold together. Shape into 2-inch meatballs and place them on the baking sheet. Then bake for 15 minutes. Serve warm. I served these with sweet chili sauce, which worked great.
